Filming for the BBC: The Truth About Food, I decided to take a trip down memory lane and film the life in a typical Dutch mill for wheat production where they solely depend on the unpredictable wind! Visiting Fred, who lives and works in the mill, and Tessa, being educated to become a miller really shows how special this, by Unesco protected profession, really is. Stepping into this historic mill, providing people with flower for hundreds of years, hearing the blades cut through wind, the wood crack and seeing the construction start to do its magic, it is crazy to realise how resourceful people actually already were back in the day! Fun fact: having received some handmade pancake flower I can tell you first hand to start start getting flower here & bake yourself!
